Easy Cookie Dough

1 cup butter, softened
1 cup granulated sugar
1 egg
2 tsp baking powder
2 3/4 cups flour
1 tsp vanilla extract

 

1. Preheat oven to 400 degrees.

2. In a large bowl, cream butter and sugar with an electric mixer.

3. Beat in egg and vanilla.

4. Add baking powder and flour, 1 cup at a time. Mix well. The dough will be stiff, blend the last cup of flour in by hand.

5. Do NOT chill dough! Dough can be colored with food coloring.

6. When your cookie creations are ready, bake on ungreased cookie sheet on top rack of oven for 6-7 minutes (or until cookies are lightly browned).

Gluten-Free Sugar Cookies

1/4 cup shortening
1/4 cup canola oil
2/3 cup granulated cane sugar
2 egg yolks
2 tsp. gluten-free vanilla extract
1 3/4 cup gluten-free all-purpose flour
1/2 tsp salt
3 TBSP water (as needed)

 

1. Cream shortening, sugar & oil for several minutes with an electric mixer until very fluffy.

2. Add egg yolks, vanilla extract & food coloring.

3. Mix in the dry ingredients, adding in tablespoons of water as need to keep dough together and avoid dryness.

4. Pat the dough into a disc shape, cover tightly with plastic wrap and refridgerate until very cold (approx. 3-5 hours, overnight is best).

5. Take dough out when ready and PRESS DOUGH!

6. Bake approx. 8-10 minutes at 350° F (static oven) or 325° F (convection), or until light brown.

7. Cool on cooling rack and frost with gluten-free frosting, if desired.

Gingerbread Cookies

1 1/2 cup dark molasses
1 cup packed brown sugar
2/3 cup cold water
1/3 cup shortening
7 cups all-purpose flour
2 tsp baking soda
1 tsp salt
1 tsp ground all-spice
2 tsp ground ginger
1 tsp ground cloves
1 tsp ground cinnamon
1 pkg. chocolate frosting (16 oz)

 

1. Mix together molasses, brown sugar, water & shortening.

2. In separate bowl, sift together flour, baking soda, salt, all-spice, ginger, cloves & cinnamon.

3. Add flour mixture to sugar mixture, and mix well.

4. Cover dough & refrigerate for 2 hours.

5. When dough is ready, take out and PRESS DOUGH!

6. Cook at 350° for 10-12 minutes. Cool & decorate with frosting.

Oatmeal Animal Crackers

2 cups sugar
2 cups old-fashioned oats
1 tsp baking soda
1/4 tsp salt
1/2 cup shortening
1/2 cup hot water
1 TBSP vanilla extract
2 cups all-purpose flour

 

1. In a bowl, combine sugar, oats, baking soda & salt.

2. Cut in shortening until crumbly.

3. Add water and vanilla; stir until blended.

4. Add enough flour to form a stiff dough.

5. PRESS DOUGH!

6. Cook on greased baking sheets at 350° F for 8-10 minutes or until lightly browned.

7. Cool on wire racks.

Peanut Butter Cookies

1/2 cup butter, softened
1 cup creamy peanut butter
3/4 cup sugar
3/4 cup brown sugar, firmly packed
2 large eggs
1/3 cup milk
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda

 

1. In a large mixing bowl, cream butter, peanut butter, sugar & brown sugar.

2. Beat in the eggs, milk & vanilla.

3. Combine the flour, baking powder & baking soda. Add to creamed mixture and mix well.

4. Cover and refrigerate for 2 hours, or until easy to handle.

5. When dough is ready, take out and PRESS DOUGH!

6. Bake at 375º for 7-9 minutes, or until firm & edges are golden brown.

7. Cool for 1 minute, then remove from pans and place on wire rack to cool.

8. Frost and decorate as desired.

Chocolate Cut-Out Cookies

1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/4 tsp baking powder
1/8 tsp salt
3/4 cup butter, softened
1 1/4 cups white sugar
1 egg

 

1. Sift together flour, cocoa, baking powder & salt. Set aside.

2. In medium bowl, cream together the butter and sugar until smooth. Beat in the egg.

3. Gradually stir in the sifted ingredients to form a soft dough.

4. Divide dough into 2 pieces, flatten and wrap in plastic wrap. Refrigerate for 2 hours.

5. When dough is ready, take out and PRESS DOUGH!

6. Bake at 375° F for 8-10 minutes.

7. Allow cookies to cool on baking sheets for 5 minutes before frosting or decorating.
